In the Kitch with Kids

Hey Ya'll's!  I thought I'd share a recipe or two that Kate and Lola love to make with me weekly.  They're our staple, healthy meal ideas that replace lucky charms and chicken nuggets.

Today's recipe I'll share is our good ol' granola.  My mom passed on the recipe to me when I got married and I've tweaked it only slightly.

Here 'tis.


Preheat oven to 300
Get out your tiny pot and mix in:
1/2 cup veggie oil
1/2 cup honey
1/2 cup brown sugar
Heat on medium until the sugar is dissolved.  Turn off heat and pour in 2 tsp vanilla.

Get out your huge mixing bowl.  Pour in:
5 or 6 cups of Old Fash Oats
1 to 2 cups of chopped walnuts.  Just depending on how nutty you like it.
1 5oz bag of raw, unsweetened coconut (optional)
1 6oz bag of slivered almonds
A good dose of cinnamon.  I like lots.  It's so good for you.

Toss the dry ingredients until it is well mixed.  Pour on the wet ingredients and stir until the dry ingredients are moistened.  Spread onto a greased jelly-roll pan.  Cook for 45 minutes, stirring every 15 minutes.

Also, some people like to add in raisins, craisins, dried cherries, or what have you.  Those are great additions.  I, however, do not like cooking those in with the oats.  They get hard and burnt pretty quickly.

Sometimes we don't even wait until it's cooked before we dive in. :)

Oh we love granola. This is a fabulous recipe. You should go over to 100 days of real food and check out some of her recipes. you would dig them :)

I'm scared of granola because I used to think it was so great for you... so I ate it every morning of my fresh year of college... and then I got fat. And Alyson told me the truth about it. But I guess if you don't eat anything but granola than you're ok :)
