Guys, I just made some of Pioneer Woman's Berry Butter. You're probably thinking what I originally thought when I first saw the recipe, and what Nathan said while I was making the recipe, "Why are you taking the time to mix berries with butter? Can't we just put sliced berries on our waffles?" Dude, no.
You'd don't even have to pour on the syrup now. It's just heaven on your waffle (or bagel or pancake). I mixed 2 sticks of softened, fluffed-in-the-mixer butter with 1/2 cup sliced fresh strawberries (you could use any berry). You don't have to, but I put in a tablespoon or two of powdered sugar. Mix just until the berries begin to get beaten up. Once it's mixed, roll it into a tube of saran wrap and fridge it. You can just slice it off and slather it on your hot waffles.
I may have been too generous with my berry measurement, or maybe it was the added sugar, but my strawberries made quite a bit of juice while they sat in the butter log. Pioneer Woman actually only used raspberries, so maybe strawberries are just juicier. Anyway, half the recipe if you think you won't eat it all in a few days. Those berries will get older and juicer the longer they sit there. We managed to polish ours off in 4 days. And what a wonderful 4 days it was.
