Healthy Pancakes

I tweaked a recipe today and the girls screwed up their faces, but I thought it was good.  They were just expecting a fluffy, floury cake.  This one is oaty.  And they don't hold together very well because of that, so just be careful flipping them.

I ran oats through my food processor to make oat flour.  Here is the recipe.  I think it's yummy.

1 cup oat flour
2 Tbsp brown sugar
2 Tbsp baking powder
3/4 tsp salt
1/2 tsp cinnamon
1 1/2 cups of oats (not food processed)
2 cups milk (buttermilk would be great, but regular is fine)
3 eggs
1/4 cup veggie oil
1 cup blueberries (I thawed frozen berries)

No bubbles will come to the surface of these to indicate when it is time to flip.  Just test the edge of your cakes.  They will need to be pretty well cooked before turning just so that they don't tear to pieces.

Top with syrup.  I thought they were wonderful and I loved that I wasn't giving myself a tummy full of flour.

Hey, today is Halloween!  And Daddy is out of town. :(
Who plans an airplane convention over Halloween?  Mean people, that's who.
Thankfully, Grandma is throwing a Halloween party for us.  She is making dinner, has planned games, and made treats.  What a lady!
So I'm taking 3 butterflies and a ladybug out tonight.  I'm sure it will be an incredible time, even though we'll miss the dad.  I'll post pics.
