I'd like to recommend that you make these chocolate chunk muffins from some girls's tumblr. It's just full of healthy greek yogurt, applesauce, and oats.
The recipe calls for no flour, just oats run through the food processor. But it's a pretty runny batter, which scared me, so I threw in half a cup of whole wheat flour. I guess you could just put in more oats if you want.
I also added in chopped walnuts and cinnamon.
