School morning breakfast, and the birds and the bees

School mornings are sometimes rushed, and I kind of hate giving the girls cereal for breakfast, just because I know how long it doesn't last.  If I have cereal I'm usually starving an hour later.  Also, it's fake food and full of sugar.

So, I love to double a good muffin recipe and freeze half of it.  I love this muffin recipe because it has no flour in it.  It's loaded with oats.  If I make oatmeal for breakfast, the kids cry.  If I make chocolate muffins, they say "thank you" all through breakfast.  Here is the recipe:

Chocolate Muffins

1 3/4 cup oats
2 eggs
3/4 cup cocoa powder
1/2 cup applesauce
1 tsp vanilla
1/2 cup greek yogurt
1 cup sugar
1/2 tsp cream of tartar (I forgot to put this in last time and they were fine)
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt
1/2 cup chocolate chips

Optional: I throw in chopped walnuts and coconut.
Also, it just occurred to Riley and I that it would be pretty yummy to make a peanut butter chocolate version.  You'd probably just need 1/2 cup.

Heat oven to 350 and bake 12 to 15 minutes

As I said before, though, I always double the recipe.  We eat them until we're bored with them (for a couple of mornings) and then I freeze the rest for a week.

I happened to have a can of whipped topping to squirt on top of them for the first day back to school.  You gotta celebrate these things.  That's an optional exciting thing to make it even more special.

Another school morning breakfast idea is to make double waffles and freeze them.  Just toast them like an Eggo waffle the the morn.  We put a skimming of Nutella on there and fresh sliced strawberries.

I just find that it's nearly depressing when our options are Life and Frosted Mini Wheats.  Doesn't that depress you?  I'm just realizing that whether I am manic or depressive depends upon how exciting our menu is.  Kind of joking.  But kind of not.  These things matter!  It's my love language.

This is why I have to do Ripped in 30 every day.

In other news, I just read 6 Ways to Keep the Little in Your Girl, which I do recommend.  There is also Keeping the Good in Your Boy, if you've got a boy Talk coming up.  It was really helpful in talking with my big girls.  My sweet, big big girls.  Can't believe Riley is practically a tween.  Gaaaaah.

I can't believe it either. She's so old. I get along really well with 12-year-olds. I look forward to hanging out with her.
