Food, food and paint
On the food front:
This Peach Butter Recipe is my favorite new thing. Even though I could never find any ripe peaches, it worked just grand. I think I actually made about half of this recipe, and it filled 2 of those 14 oz. coconut oil jars perfectly. I'm not sure how many pounds I had, but I had about 15 peaches, so I used half the water and sugar.
I accidentally deleted the picture, but we put cream cheese and this peach butter onto some whole-wheat pecan waffles. I made enough waffles for an afternoon snack, breakfast the next morning, and to put a gallon size bag in the freezer. I love planning ahead.
Then for dinner I made This Tomato Soup. I actually doubled the recipe without doubling the roux, for our health's sake. I love it because there are so many vegetables in there all blended in. And it's was perfectly creamy/cheesy and vegetable-y. It wasn't the girls' favorite, but I gave them bread for dipping and they cleaned their bowls.
I painted the kitchen! What used to be dark red is now a very light gray.
It's a pretty fat wall of nothing. I think that lone window needs a rod and a curtain. And the wall needs stuff.
We've let these things go for years. We'll survive the 2 years it takes me to get curtains and "stuff." I'm just very happy with my gray wall right now.
