I love this recipe. Below is the dressing, which I always double.
*Don't put the chicken broth in the dressing.
I put the dressing on this brown rice-lentil salad.
I let the rice simmer 10 minutes before I put the lentils in. Mushy lentils make kids cry. Also, you may cook the rice in chicken broth, but I just salted my water a bit.
For our family, I cook 2 cups brown rice and 2 cups lentils. This makes enough for a couple of dinners for us.
Add to the cooled rice and lentils:
chopped cellery
chopped purple onion
honey roasted sunflower seeds or slivered almonds (I put both in this time)
craisins
I often put in grated carrots too, but didn't have them this time.
Mix in the dressing and refrigerate.
I gave this to the girls for dinner along with mashed, buttered sweet potatoes. Then I gave them the salad for lunch at school.
It's filling, yummy, and not peanut butter and jelly or the school's fake chicken nuggets.
Nathan has been out of town this week. Blaaaa. We're surviving, but I'm so excited for our welcome home party on Thursday.
Of course, the girls had their cards made for him on Sunday afternoon. We're on top of partying.
We've already decided that our after-dinner celebratory snack will be fancy s'mores. The fancy part is to add a sprinkling of raspberries to the dark chocolate and marshmallows. Awesome, right?
