Just wanted to share this recipe. Last night we had Sweet Potato and Spinach Risotto. I made it with Farro rather than Arborio rice. Farro doesn't become as soft and creamy, but I like the little pearls, and I tell myself that it's healthier since it's brown rather than white (I have done no research).
This recipe has no cream or milk in it (just veggie stock and white wine), so the parmesan stayed stretchy rather than creamy. But that's alright with me. The savory parm with the sweet potatoes is just the best.
I really do want to give this a regular slot in our favorite meals rotation. Friday night is sweet potato risotto night at the Weber's. :)
Also, oh my, I hadn't exercised or walked the dog in 2 weeks. Oh my. And ate an average of 3 cookies a day over Christmas break. O my gracious. I was craving a cheesecake yesterday and Nathan said "No", I was not allowed to provide our family with access to even more sugar. So, I'm back into the swing of running Lucy, and I threw some sugar in the trash, and hopefully my pants fit again soon.
But, I do think I should make this Carrot Cake Cheesecake for my mom's birthday in a couple of weeks.
