What Ima Cookin

What I had for lunch
I usually have carrots and humus and/or pbj with Lola.  She wants nothing but that every day for lunch, preferably on the trampoline in the sunshine.  But today I had skipped my spinach smoothie, and actually forgot to drink water at all (Oops. dirty house=cleaning fun=dehydration), so I loaded up on this spinachy meal - 2 eggs, 3 fistfuls of spinach, and one roma cooked in with the eggs.  Black bean salsa on top.  Good stuff.

My friend, Stacey, made and Pinned this veggie enchilada casserole.  I ate her casserole and loved it, so I pinned her pin and these are all the chopped veggies that will go in it.  Sweet potatoes, cauliflower, peppers, onion, corn, black beans, garlic, cheesy cheese...wonderful stuff!

Tomorrow's breakfast
 This is actually a cupcake recipe, which I altered to become a healthy muffin.  What used to be Pumpkin Spice Latte Cupcakes has now become Whole wheat flour, applesauce in place of oil, plenty of flax seed meal, Latte breakfast muffins.  Also, I run a cup of walnuts through the processor for any cookies or muffin recipe I make.  I just love nutty, mealiness.  This will make tomorrow's crazy morning less crazy.

This morning Lola woke up at 5:30, climbed into Claire's bed and woke her up, they squeaked the top bunk around until Nathan and I were wide awake.  We brought them into our bed so that Kate could keep sleeping.  Riley woke and came into our bed too.  They flopped around until 6:30 when we sent them to the playroom.  I slept for 10 minutes before Riley said she was starving.  I stirred oatmeal like a crank pot. 
I envision tomorrow morning, sending them all to the pile of muffins the moment they awake.  I don't care where the crumbs go.  But I plan on sleeping in just a wee bit more because of the muffin pile.
Get yourself a muffin pile, and get 10 more minutes of sleep.  Good stuff! :)

Ha! If muffin pile = sleep I just may do it! Those veggie enchiladas are on our menu too! Heavenly. You cook like a boss.
